Phran's Falafel

A tried, tested and trusted recipe from Phran:

Preheat oven to 210 degrees and spray a large baking sheet with FryLight. Peel one large sweet potato (mine was the size of 2 large baking potatoes) and cut into chunks. Steam for 10-15 minutes. Drain 1 tin of chickpeas and pulse in food processor until fairly finely minced. Put into a bowl. Grind together 1 tsp cumin seeds, 10 dried small red chillies (I like falafel really spicy so reduce if you don't!), 1/2 tsp black peppercorns and 1 tsp coriander seeds. Add to bowl with chickpeas. Add 1/2 tsp salt and 1/2 tsp ground cinnamon. Test sweet potato is cooked - should be very soft all the way through and purée in food processor or put through potato ricer. Add to bowl with chickpeas and spices and stir all together until well combined. With 2 dessert spoons, form rounded dollops of mixture and slide onto baking sheets. Spray with FryLight. Bake for 15-20 minutes until slightly browned.

Mushroom and Bacon Penne

Mushroom & Bacon Penne

Free on Extra Easy

2oz/57g baby leaf spinach, roughly chopped

11oz/312g dried penne (or any short pasta)

11oz/312g bacon rashers, all visible fat removed, roughly chopped

1 onion, finely chopped

7oz/198g button mushrooms, halved or quartered

2 garlic cloves, finely chopped

5oz/142g cherry tomatoes, halved

4 tbsp fat-free natural fromage frais

Salt & freshly ground black pepper

Put spinach in large colander and pour over boiling water so it wilts. Press to remove excess liquid and set aside.
Cook the pasta according to packet instructions, drain, set aside keeping warm. Meanwhile stir-fry onion and bacon using Fry Light for 2 – 3 minutes.
Add mushrooms, tomatoes and garlic to pan and stir fry for 6 – 7 minutes or until mushroomns have softened. Stir in the drained spinach and pasta. Stir fry for another 1 – 2 minutes or until piping hot, stir in fromage frais. Season to taste and serve in warm bowls.

Chop your potatoes into chips...
par-boil in salted water for 5 minutes.
Drain well
spray a baking tray with fry light... put chips on the tray... spray with fry light
sprinkle with seasonings (to taste)
put in the oven for 20-30 minutes

YUM!!!!!!!!

Strawberry Ice Cream

300g frozen summer berries/fruits anything you like
300g mullerlight a berry one or vanilla
2-3 tbs powder sweetner
vanilla extract

Place the frozen berries in the blender/mixer and fling in all the other stuff, blend quickly while the berries are still frozen and before your eyes it turns into totally delicious ice cream.

Lisaloo's Coriander and Lemon Houmous

mmmmmm! Another lovely Hummus recipe from Lisaloo this time!

Coriander and lemon hummus.

1 tin chick peas drained and rinsed (the ones in the ethnic isle of tesco are bigger and cheaper than tesco own brand)
5 cloves garlic
the rind of a lemon
the juice of a lemon
black pepper
sea salt
a big dob of 0% greek yog
a whole packet of corriander leaves
2 tsp sweetner powder

bung the whole lot in a processor and whizz the crap out of it till its smooth creamy and green. Totally free food on ee. It makes about enough for 2 massive dippy lunches or 3 serious telly snacks. Keeps for about 2-3 days.

Houmous from Bunnylush

I adore this... I need to try it. I miss eating tubs and tubs of it!

One can chickpeas
3 tbsp Greek 0 % yogurt
Half juice lemon
Salt/ pepper
1 tsp cumin
3 garlic bulbs or more
Water to add to your consistency

Whizz all up in blender adding water slowly to taste.
I'm sure it's not as nice as Lisa makes it but I couldn't be bothered grated lemons

Singapore Noodles

Another lovely takeaway / fakeaway recipe from Bunnylush!

Yum!

Serves 2

Syns - 0.5 per serving, using chicken as HEX B

Ingredients
1 tbsp grated fresh root ginger
1 red chilli, de-seeded, finely chopped
5 fresh shiitake mushrooms (or normal mushrooms), sliced
2 tsp ground turmeric
1 red pepper, de-seeded and sliced
1 handful julienned carrot strips
Pack of asparagus and baby corn, chopped
226g chicken breast or thigh (raw weight), cooked and sliced (HEX B)
2 bundles of thai rice noodles
2 tbsp light soy sauce
2 tbsp oyster sauce (1 syn)
1 tbsp clear rice vinegar or cider vinegar
1 free-range egg, beaten
2 spring onions, sliced lengthways
crushed dried chillies (optional)
sesame oil (optional)


Method

Prepare all the ingredients in advance - chop all the veg and cook the chicken, get the noodles on (if using the ones that need to soak for 10 mins)

1. Spray a wok with Frylight and heat until very hot, then stir fry the ginger, chilli, mushrooms and turmeric for a few seconds.

2. Add the red pepper, carrots, asparagus, baby corn. Add some boiling water a little bit at a time to help create steam and cook the veg. If your wok has a lid, cover it and let steam for a few minutes or until the veg is how you like it. Add the cooked chicken and mix.

3. Soak the noodles for 5 mins in boiling water and drain.

4. Add the noodles to the wok and toss for 1-2 minutes, then season with the soy sauce, oyster sauce and vinegar. Stir well to combine.

5. Pour the beaten egg into the wok and stir gently for one minute, or until the egg is cooked through. Pile the stir-fry onto a serving plate, season with a dash of sesame oil (optional - add 1 syn per 1/2 tsp - worth it!), then sprinkle with crushed dried chilies and garnish with the sliced spring onions.

Egg Fried Rice - Cook rice, rinse with cold water and leave to cool and dry completely. Spray wok with a little frylight, cook rice till hot, push to edges to make a gap in the bottom, add a beaten egg, cook and then chop up with spoon and stir it through rice. Add peas and some soy sauce. Free on EE

Chow Mein. - Frylight in the bottom of a large pan, add one slice onion and soften, add some chopped mushrooms, some beansprouts and leave to cook for 5 minutes. In the meantime cook some noodles in a seperate pan, drain add to the veggies, add 1-2 tbsp of soy and a glug of vinegar. Cook for 5 mins. Free on EE

Green chilli stir fry -Slice an onion, some mushrooms and peppers and fry 'light' in a large pan until softened a little. Add a large sliced green chilli and some beansprouts, some ginger and a glug of soy. Stir through and cook for 5 mins or so. Free on EE.

Crunchy Chicken -
I couldn't figure out a way to do battered balls, so I just dipped 400g diced chicken into some beaten egg and then into a shallow bowl that had 2 tsbp of seasoned flour. I then put them on a frylighted baking sheet and cooked at 180 for about 10 minutes. Serves 4, so 7 syns for the flour makes about 2 syns per portion?

Sweet and Sour Sauce.
One tin of tomatoes blended till smooth, 2 tbsps of splenda, a glug of vinegar, some ginger and chopped red chillies, sliced spring onion and about 24g pineapple chunks in juice. Chuck it in a pan, stir a bit and simmer till reduced how you like it. Makes about 8+ portions depending on how much sauce you like. Free on EE

Scotch Eggs - from Bunnylush

Serves: 4

ingredients
6 medium eggs
400g lean pork steaks, all visible fat removed, roughly chopped
125g rindless lean bacon, all visible fat removed, finely chopped
1-2 tsp mild curry powder
2 tbsp dried parsley
1 tsp dried mixed herbs
salt and freshly ground black pepper
50g dried wholemeal breadcrumbs
low calorie cooking spray
method
1. Preheat the oven to 200°C/Gas 6.

2. Put four of the eggs into a pan of cold water and bring to the boil. Boil for 5-6 minutes then plunge into cold water for another 4 minutes. Carefully peel and set aside.

3. Place the pork steaks, bacon, curry powder and dried herbs into a food processor. Season to taste and blend until fairly smooth. Transfer to a bowl and divide the mixture into four portions.

4. Flatten a portion of the mixture in your right hand and, with your left, take an egg and wrap the mince around it until it's fully encased. Repeat for the remaining three boiled eggs.

5. Spread the breadcrumbs onto a wide plate.

6. Beat the remaining eggs and dip each Scotch egg in the beaten egg and then roll in the breadcrumbs. Place on a baking sheet lined with non-stick baking parchment and lightly spray with low calorie cooking spray.

7. Place in the oven and cook for 20 minutes or until lightly golden. Cool completely on kitchen paper before packing them up in airtight containers for your picnic.

Boots' Fab Sauces! Sweet&Sour -- BBQ

Hello all. Apologies for the lack of posting lately! Hopefully going to catch up with it all tonight!

Some fabulous Sauces from the lovely Boots! Great for the barbie!

Sweet & Sour Sauce 4.5 syns

half a cup of chicken stock (I never measure just guess)
4 tbsp red wine vinegar
5 tbsp sweetner
2 tbsp soy sauce
1 tbsp tom ketchup

Bung in pan and heat then add 1 tbsp on cornflour mixed with water to thicken

Barbie Sauce Syn Free

1 packet of passata
4 tbsp of balsamic vingegar
3 tbsp sweetner
1 tbsp worcester sauce
chilli ( I add loads as I like spicy)
I also add a bit of smoked paprika too

Simmer until reduced keep ages in fridge in a glass bottle.

Minimin's Lentil Dahl - posted by Bunnylush

nother fab find from our Bunny! This looks and sounds great!A tried, tested, and much appreciated recipe by all accounts.

2tbsp water
2 medium onions (finely sliced)
2 cloves garlic (crushed)
1 tbsp coriander seeds
1 tsp ground ginger
1 tsp ground turmeric
2 tsp ground cumin
1/2 tsp chilli powder and 1 whole chilli (with seeds)
2 bay leaves
2 inch piece cinnamon stick
1/2 tsp salt6 black peppercorns
8oz/225g red lentils
1 1/2pt boiling vegetable stock

Place first 8 ingredients in a 1.5l microwavable dish, cook on full power stirring once for 4 mins,
Add remaining ingredients & stir wellCook on full power for 10 mins, stir and cook for a further 5-8 mins
Season with salt, pepper or chilli to taste.

I also add spinach now and again or serve it on the side, and sometime serve with rice, or a roti which are 6.5 syns (average)

Pizza - a MissRachel / Elsz creation!

As you may have seen, MissRachel provided a wonderful cheesey garlic bread recipe.

Well, it sounded amazing, soI made a variation on your garlic bread tonight and it was out of this world!!!
I turned it into PIZZA!!!!!!!!!!!!
I made the base with smash (full packet, with about 300ml of water), pressed into the bottom of a round baking tray., and baked it in the oven.
While that was cooking, I quickly softened some mushrooms in a pan.
I also strained some chopped tomatoes, so the flesh was left, and mixed in some chopped garlic, and some chopped basil.

When the base was done I spread the tomatoes over the base
I then added 56g cheddar cheese (2 x Healthy A), and a light Laughing Cow triangle (sliced) (1.5 syns I think)Then placed some red pepper strips on it, spread the mushrooms, some rocket, and some slices of pineapple.
I then put it in the oven for about 15 minutes.

Well... it was absolutely BLOODY DELICIOUS!!!!!!! I will definitely make it again.
Will probably get mozarella or low fat cheese to use next time.


Tasty Flapjacks - thanks to Kate

Another cakey recipe! This time, using a Healthy B!! SO you don't have to feel bad at all!
Only problem is you have to try to just have 1!!!

I found a recipe for HEXB flapjacks on minimins which I plan to try later in the week;

On the basis that you can split your HEXB this recipe includes a total of 10 HEX B (all plans) and 5 syns- the recipe makes 10 flapjacks so each flapjack is 1 HEXB plus half a syn OR 6.5 syns if not counted as HEXB.

Ingredients:
128g ready to eat prunes
106g ready to eat apricots
3 tablespoons olive oil
120g porridge oats
2 tablespoons honey
1-2 tablespoon(s) sweetner (if you like things extra sweet although I prefer it without)
1 teaspoon cinnamon
half teaspoon salt

Method:
Pulse the prunes and apricots in a food processor until chopped very fine. Add in the rest of the ingredients and stir the claggy mixture very well.
Spray a shallow tin (approx 5 inches by 8?) with fry light and spoon mixture in and press down.

Bake for 20 minutes at 180C/350F/ gas mark 4. Run a knife along the edge of the cooked mixture and cut into 10 pieces while still hot (they will feel soft at this point but don't worry- they get crisper as they cool). Leave them in the tray to cool and once cool, store or eat!

Carrot Cake - Slimming World Style - posted by Bunnylush

We all love cake don't we?
Some slimming world cakes are a bit yuk, some are managable, some are yummy! Bunnylush assures us that this one is yummy!!

Carrot cake 13.5 syn any plan

4 scan bran crushed
1 weetabix crushed
5oz grated carrot fine
Half tsp nutmeg
1level tbsp runny honey
2level tbsp mincemeat
3 beaten eggs

Topping
1 pot quark
Lemon juice
Sweetener to taste

Preheat oven gas 4/ 180 C
Mix all ingredients together ( not topping)
Transfer to lined baking tin and bake for hour
When cooked turn onto rack to cool

Mix quark lemon and sweetener to taste spread on cake when cool.

This was not a deep cake, more like an inch tray bake size?

Lisaloo's Free Houmous!

Lisaloo posted this the other day. I ADORE houmous, so another addition to the "to do" list!

1 tin drained and rinsed chick peas
4 fat cloves of garlic
20 twists of black pepper
1/4 tsp sea salt
juice of a whole lemon
juice of a whole lime
zest of half a lime
zest of half a lemon
1/2 of a small tub of tesco fat free greek style yog, Vegans thats about 4 tbs of soy yog.
1tbs agave (1.5 syns but you could sub sweetner but it makes such a big bowl its hardly owt)

Now I was going for lemon/pepper but you could add owt, corriander or cumin and lemon would be nice or piri piri! Seriously I am fussy about hummous and this is properly nice, I am so pleased to have found something snacky that isnt syn free chips lol!

I have a big old bowl with carrot, pepper, cucumber and celery sticks right now but you could also have your HE bag of mini ryvitas! OM NOM NOM!

Another version thats really nice is same base mix but with half a large bunch of fresh corriander blended in, thats the one I make most often but Im totally going to try harissa one now.

RubyRed's Baked "Risotto"

An interesting, and yummy sounding recipe from Rubyred. Using Pearl Barley instead of risotto rice!

I will have to try it, as I have rather a lot of Pearl Barley!!!

Chop 1 onion and fry in frylight until soft.
Add 1 mug of barley and stir until barley is "wet" (you might need to add more frylight)
Add chopped mushrooms to taste.
Stir everything together than transfer to a casserole dish sprayed with fry light.
Pour over 1 mug of chicken or veg stock.
Bake for approx 30 mins at 190 deg C (ish) stirring occasionally.
After 30 mins add another mug of stock, stir and replace in oven for approx 30 mins or until the stock is almost absorbed.

(It's also nice with roast chicken and I like it as a meal in itself with maybe roasted veg since the oven is on, or just plain veg to be honest. Barley is cheap and this is also a good recipe when maybe you have picked up cheap mushrooms or need to use them up before they go slimy!!)

Lisaloo's Syn Free Sweetcorn Soup

We have a lovely new entry into the SW ladies - the wonderful Lisaloo! :)

Wonderful recipe from her too! Another addition to the "To Try" list! It's as long as my arm now!!

sweetcorn soup, syn free.

chop a large onion or two mediums and fry with frylite till soft.
Add 4 cloves of crushed garlic.
Then add 500g frozen sweetcorn, 1 tin of drained cannelini beans and about 2-3 pints of stock. Chicken or veg whatever.
Simmer the whole lot for 15-20 mins then blend till smooth. Blend it a lot because you want the skins of the sweetcorn gone.
When its smooth season with salt and black pepper and add in one tin of salad crisp sweetcorn for a bit of a crunch. Its DELICIOUS. Its not going to be super slimming because only the onions are superfree but when you need something a bit treaty and indulgent its really nice.

Phran's Delicious Red and Orange Soup

This sounds absolutely DELICIOUS!! It's definitely on my list to try.
And very soon too!

Sauté finely chopped onion, carrot and celery until the onion and celery are translucent
Add a tin of chopped tomatoes, plenty of pepper and a bit of salt and a tin of water
Leave to simmer for 20 minutes or so.
Then remove half and liquidise it for a slightly chunky soup (or all of it if you like it smooth or none of it if you like it really chunky)
Return to the pan with a handful of mini soup pasta or broken up spaghetti and another 1/2 tin of water.
Simmer for another 15 minutes until the pasta is soft and has absorbed some soupy goodness.

Yum.

Elsz' Tomato and Lentil Soup

This is one of my favourites... filling, and cheap too!

TOMATO AND LENTIL SOUP
1 or 2 onions
garlic
tinned tomatoes
lentils
stock

brown a chopped onion or two in a large saucepan, add some chopped garlic.
When they're browned add about 200g dried red lentils, 2 pints of stock, and 2 tins of tomatoes.
Bring to the boil, turn down the heat, and simmer for about 20 mins / 30 mins.
Add black pepper, salt, and herbs to taste.

Lentil Shepherds Pie!

This is delicious... out of the green cookbook I think.
This is a "keeper"... we've made this several times. Absolutely delicious

FREE ON GREEN / EXTRA EASY
Serves 4

1 carrot, diced
1 small onion, chopped
2 garlic cloves, crushed
198g / 7oz red lentils
568ml / 1 pint stock
2 tomatoes, skinned and diced (I didn't bother skinning them!)
57g / 2oz frozen peas
dash of tabasco sauce
salt & freshly ground black pepper
1kg / 2lb 4oz potatoes, diced

1) Spray large saucepan with fry light - cook carrot, onion and garlic for 2-3 mins until softened. Add lentils & stock - bring to boil - cook for 10 mins

2) Stir in tomatoes, peas & tabasco sauce - simmer for 2-3 minutes until tender. Season to taste and transfer to ovenproof dish.

3) Meanwhile, cook potatoes in large pan of lightly salted boilding water for 10-15 mins until tender. Drain & mash. Season to taste and spread over lentil mixture.
Place under preheated hot grill for 2-3 minutes until golden brown.

The recipe has 57g sprinkled on just before you put under the grill... this makes it 2 syns per portion (remember - serves 4!). It's nice without cheese.

Quorn Hot Pot

This was taken from one of the Slimming World recipes books (green or comfort I think!)

Absolutely delicious. I served it with roast rosemary potatoes. Yum yum!!

Quorn Hot Pot
FREE ON GREEN / EXTRA EASY

1 onion, chopped
1 large leek, chopped
350g pack Quorn Pieces
1/2 swede, diced (I missed this out, as there was no swede in tesco!)
227g/8oz parsnips, diced
2 carrots, diced
1 red or green pepper, deseeded and chopped
284ml / 1/2 pint stock
397g / 14oz can chopped tomates
284ml / 1/2 pint passata
1 tsp dried mixed herbs

1) Spray large nonstick frying pan with Fry Light (I did it all together in 1 large saucepan) and cook the onion and leek for 5 mins. (I added 2 cloves garlic, crushed too). Stir in the Quorn pieces and continue frying for 2 mins.

2) Add remaining ingredients and simmer for about 30 mins, stirring occasionally until vegetables are tender


I didn't add the pepper as it said, but put in a handful of frozen pepper. Also added a few sliced mushrooms, a stick of celery (chopped), a red chilli (deseeded and chopped).

Rice Pudding - with a Healthy A!

I tried this the other night, and it worked quite well!

50g pudding rice
330ml skimmed milk
200 ml water
sweetener to taste
fruit / cinnamon / nutmeg

put the rice, milk and water in a saucepan, bring to the boil, then turn down to a simmer
Add a few tablespoons of sweetener.
let the mixture simmer for about an hour... until the rice has swelled up and it's looking like rice pudding!

Chop up some fruit - raspberries / strawberries work as they make it look like it's got jam in!!
Or add cinnamon / nutmeg to taste!

Delicious!

Slimming World pancakes - free on all plans

One egg per person
Vanilla essence
Sweetener, to taste (at least 1/2 cup per egg I would say)

Separate the eggs, leave the yolks to one side and mix in 1 tsp vanilla essence per egg used.
Whip the egg whites with the sweetener, until fluffy. Fold the egg yolk mixture back in until combined with the whites.

Pour the mix over a frying pan on medium heat, sprayed with Frylight. These pancakes cook slower than 'normal' ones made with flour and are very fragile, so use a spatula or similar to turn them over.

Strawberries and cream sponge cake

She's AMAZING!! Well worth a look for a sweet treat!

Here's one of her recipes

Strawberries and cream sponge cake (copied and pasted from the Slimming World Cake Lady)

60g low fat spread
110g self-raising flour
3 eggs
8 tbsp sweetner
few drops of vanilla essence
Half pot of quark
50g white chocolate
Fresh sliced strawberries

Pre-heat oven to 180C
Line a 7-8 inch baking tin
Cream together low fat spread and sweetener
Sift in flour and mix
Add a few drops of vanilla essence
Pour into baking tin and bake for 20 minutes (approx)
Leave to cool
slice in half
melt white chocolate, mix in quark and sweetener to taste
spread on bottom half of sponge then add sliced strawberries
sandwich together and decorate top with small about of frosting and more sliced strawberries
ENJOY
WHOLE CAKE IS 42 SYNS, CUT INTO 12 ITS 3.5 SYNS PER SLICE

Elsz' Simple Fish

Just a quick and simple way to cook fish!

If fresh, or defrosted from the freezer...
put it in a pyrex lid with the juice of half a lemon, covered in foil then put in the oven for 20 minutes.

You can always add yummy herbs to it to make it taste delicious!

To stop it from sticking, use fry light! :)

Bunnylush's stacking burgers

An extra easy treat! Burgers - the real thing!
Recipe supplied by Bunnylush!

Serves 4
2lb ex lean mince
1 onion
2tsp worcester sauce
2cloves garlic
Handful parsley finely chopped ( I used mint from garden)

In food processor ( or hand mix if not) put..
Mince onion Wor Sauce garlic parsley. Season
Mix until combined.

Transfer to bowl and make 12 shaped portions by hand. ( I placed mine in Tupperware box with greaseproof paper between layers in fridge for hours so they would be firmer)

Preheat grill. Spray burgers with frylite. Grill each side until brown ( 5 ish mins each?)

Mushy Pea Curry

still not tried this, but definitely going to have to!!

3 cans of mushy peas
1 can of baked beans
onions and mushrooms (as many as you like)
1 tablespoon of sweetener
curry powder to taste
fry light

brown off the onions and mushrooms in some fry light, then add all the rest of the ingredients and leave on the heat for approx 20-30 mins. If you find the mixture to thick just add some water.

Frylite celery carrot and onion and garlic till soft
Add 1 pint veg stock 1 syn
Pepper tsp sweetner
I tin tomatoes
Simmer 20 mins

Blend
Add yogurt if desired in serving dish

Make up 1 packet of instant mash with approx 300ml cool water (asda sp instant mash works brill but you will need to season it). It should be like dough. Spray a round cake tin with fry light and spread mash out evenly. Pop in oven untill golden brown. turn it over and add a herb of your choice (basil,parsley ect) and spread 1-2 crushed garlic gloves all over, spray with fry light then pop back in oven untill golden brown. Add 45g low fat cheese (free if using ee or use as syns) and pop back in oven untill cheese is melted.

Baked Chocolate Cheesecake - provided by Adri

A gorgeous sounding cheesecake! Slimming World style!!

Baked Chocolate Cheesecake - 6.5 syns per portion (1/10th of the cheesecake) in all plans

12 digestive biscuits
28g/1oz low fat spread
113g/4oz cocoa powder
250g pot fat-free natural cottage cheese
2 tsp finely grated orange zest
100g/3½oz fat free natural fromage frais
1 sachet chocolate flavour Options
3 tbsp artificial sweetener
2 eggs
Mixed berries and fat free natural fromage frais, to serve
1 level tsp icing sugar

1. Preheat the oven to 180°C/350°F/Gas 4. Crush the biscuits and mix together with the low fat spread. Press into the base of a 20cm springform cake tin and chill.

2. Place the cocoa, cottage cheese, orange zest, fromage frais, Options and sweetener in a food processor and blend until smooth. Beat the eggs and fold into the mixture. Mix well.

3. Spoon the mixture over the biscuit base. Level and bake for 25-30 minutes. Turn off the oven and leave the cheesecake to cool in the oven. Cover and chill until ready to serve, then cut into 10 slices. To serve, garnish with mixed berries and a spoonful of fromage frais and dust with icing sugar.

Tip: Try dissolving 2 tsp instant coffee in 1 tbsp water and blend it with the other ingredients at stage 2. This does not affect the Syns.

This recipe it not suitable for home freezing.

Adri's Mixed Stuffed Peppers

A recipe for mixed stuffed peppers, kindly provided by Adri

Mixed Stuffed Peppers- Serves 4

2 red peppers, halved lengthways and deseeded
2 yellos peppers, as above
7oz/198g dried basmati rice
Fry Light
7oz/198g lean minced lamb (I used beef, don't like lamb! You can use quorn or veggie mince)
4 spring onions, finely sliced
2 garlic cloves, finely chopped
1tsp ground cumin
1/2 tsp ground cinnamon
1 tsp dried red chili flakes
2 ripe tomatoes, finely chopped
5oz/142g baby courgettes, cut into small cubes
A handful of fresh coriander leaves, finely chopped
A handful of fresh mint leaves, finely chopped
Salt and freshly ground black pepper.

1. Preheat your oven to 200oC/Gas 6, then place the peppers on a non-stick baking tray, cut-side up
2. Prepare the filling. Cook the rice according to the packet instructions and set to one side.
3. Spray a large, non-stick frying pan with Fry Light and add the mince, spring onions, garlic, cumin, cinnamon and chili flakes. Stir-fry over high heat for 4-5 minutes. Then stir in the rice, tomatoes, courgettes and chopped herbs. Season well before spooning the mixture into the prepared pepper halves.
4. Spray the stuffed peppers with Fry Light (I didn't do this, and they turned out fine!) and bake for 15-20 minuytes. Remove from the oven and serve two halves per person, with vegetables or salad.

Phran's Garlic & Cucumber Dip

This sounds absolutely divine!! Recommended by Phran! :)

Peel and deseed a cucumber. Chop it up fairly finely and pop in a bowl with 1/2 teaspoon of salt and mix together. Transfer cucumber to a sieve over a bowl. Put yoghurt in another bowl and crush 3-4 cloves of garlic into it and mix together. When about 3-4 tbsp of liquid has drained off the cucumber add to the garlicky yoghurt. Mix together and chill for an hour or two

Scan Bran Ferrero Rocher

I know a lot of people who've made these, and I believe I've tasted some at a taster night! Good for a party!

Syns: 26 Syns for 30, 1 Syn each

You will need:
8 Scan Bran
4 level tbsp Nutella
1 level tbsp Golden Syrup
1 tbsp water
Method:


1Place the Scan Bran into a food processor and reduce to crumbs.

2Mix all ingredients into the crumbled Scan Bran and divide up into petit four cases.

3This should make 30 'Rochers'.
Variation: Try replacing Nutella with white chocolate spread and adding 2oz/57g chopped fresh apricots.

Iz's Scan Bran Chocolate Cake

A Chocolate Scan Bran cake from Iz!

1 Healthy ‘B’ Selection and 6½ syns

5 Scan Bran (1 ‘B’ selection)
28g cocoa powder (4½ syns)(or 2 sachets highlight/options-4 syns)
1 level tbsp. Golden syrup (2 syns)
15g powdered sweetener
2 eggs, beaten

Break scan bran into small pieces then sprinkle on hot water. Leave a few minutes then break up with a fork, until scan bran resembles breadcrumbs (use extra hot water as necessary). Stir in the cocoa powder, syrup and sweetener. Mix in the beaten egg and stir well.

To cook:
Line a loaf tin with foil and spray with Frylight. Bake for 25-30 minutes in a medium oven (190c).
OR
Place in a microwavable container (or pack lunch box) and microwave on high for 5 minutes.

Blaze's Fabulous Quark Recipes!

Some fantastic recipes from Blaze, all with Quark!!!

Mix the quark with sweetener and proper vanilla extract. If you use enough sweetener it's a lot like cream. I always use loads of sweetener and at least 1 tsp of vanilla extract.
Suggestions for eating: Fresh Fruit, SW pancakes

As well as the above you can use the juice of one lemon and the rind instead to make a sort of lemon cream. That can be taken a step further to make a mousse - quark, lemon juice, lemon rind, 2 eggs, whisk over a low heat until it thickens up and stick it the fridge until it sets.

quark, sweetener and a sachet of white chocolate options. Stick it in the freezer, stir and scrape it every so often as it's freezing and voila - ice-cream! White chocolate CHEESECAKE ice-cream, to be precise. Most nice served with strawberries and some crumbled up digestives (NOTE - you will need to syn digestives!)

cheat's cheese spread. Use a HEX portion of your favourite cheese, grate it as finely as you can and mix it thoroughly into the tub of quark. Leave it for a few hours or overnight and the quark takes on the flavour of the cheese

Smoked Salmon Pate

This recipe is free on a Red / Extra Easy Day. Not sure of the syns on a Green Day, but it really wouldn't be worth it!

INGREDIENTS:
2 packs smoked salmon trimmings
1 tub quark
lemon juice
black pepper

Put smoked salmon and quark in a bowl, and whizz with a blender
add lemon juice and black pepper to taste.

serve with crudites, on a sandwich, with ryvita / finn crisps / scan bran
or as part of a salad!

Scan Bran - 1 syn each or 5 for a Healthy Extra B - recipes and ideas

Scan bran can be bought from your local Slimming World group or from Holland and Barratt.













I've heard it referred to as all kinds of things, which I won't repeat. But people swear by it. Here are some ideas:

Stardust recommends the following:
Stir it into a Mullerlight and then leave it overnight.
By morning it is soft and like eating weetabix but better for you

Tinned / Prepared things that we love and are free!

So... we know it's all about preparation and what not... but sometimes there just aren't enough hours in the day.
